Getting started:
Before the first use, clean with hot water and heat for 20–25 minutes. Add 200–250 g of wood chips (use hardwoods — alder, oak, aspen, apple, pear, walnut, cedar, juniper, heather; avoid birch). Lightly salt and dry your food before placing on the racks. Smoke fish for 30–60 min, meat and fat for 60–120 min.
